Balloon Fiesta, Balloon Fiesta

We had a fabulous time at the Albuquerque Balloon Fiesta. We saw over 500 balloons take to the air in front of huge crowds. Everybody has to do this once!

While in New Mexico, we enjoyed many “New Mexican” meals. Enchiladas, chile rellenos and tacos all smothered in flavorful red or green chile.

But hold everything!! Along with that tasty chile comes the sopapilla:

The sopapilla is soft fried dough (it’s hollow inside) and you break off a piece and dribble on some honey. It’s supposed to cut the heat from the chiles you are eating. We are in LOVE! These things are out of this world. Everything here is covered in red or green chile so you need soapapillas with every meal. (The above meal of chile relleno and enchiladas has “Christmas chile” or both red and green chile; the favorite of the locals.)
